Potatoes are not only healthy but also incredibly delicious! We’ve made a wonderfully chewy potato pancake using this versatile vegetable. Forget the strenuous process of grating by hand; using a blender makes creating this pancake much simpler. This is a true potato pancake, made with 100% potato and no added starch, allowing you to fully appreciate its rich, savory flavor and delightful texture. - 12 small potatoes (baby potatoes)
- 4 pinches of salt
- 1/2 cup water (for blending)
Cooking Instructions
Step 1
First, let’s prepare the star ingredient for our delicious potato pancakes: potatoes. For this recipe, we’re using 12 small potatoes, also known as baby potatoes. After peeling the skins off the baby potatoes, cut them into 2-3 pieces each. Since they’ll be blended, you don’t need to worry too much about precise cuts; just make them manageable for the blender. Tip: If you’re not blending them immediately after cutting, soak the potato pieces in water to prevent them from turning brown.
Step 2
Place the cut potatoes into your blender. To help the blender process them smoothly, add 1/2 cup of water. Blend the potatoes until they are completely smooth and no potato lumps are visible. Ensure the mixture is a fine puree before moving to the next step.
Step 3
Now, we’ll separate the starch from the potato liquid. Place a fine-mesh sieve over a bowl. Pour the blended potato mixture into the sieve. Let it sit for about 15 to 20 minutes. During this time, you’ll notice a white, starchy sediment settling at the bottom of the bowl. We will use this potato starch for our pancake batter.

Once the starch has settled, carefully pour off the clear liquid from the top of the bowl. Scrape the settled potato starch from the bottom and add it to the reserved potato pulp (the solids left in the sieve). Mix them together well. Season with 4 pinches of salt to enhance the flavor. Stir everything thoroughly to create a cohesive batter.

It’s time to cook our potato pancakes! Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Spoon portions of the batter onto the hot pan, shaping them into desired pancake sizes. Cook until the underside is golden brown and crispy. Then, carefully flip the pancakes and cook the other side until it’s also golden brown and cooked through. Continue flipping as needed to ensure even cooking and crispiness.
