Ingredients

  • 2-3 medium potatoes
  • 1/3 carrot
  • 2 Tbsp all-purpose flour (or substitute with regular flour or cornstarch)
  • 2-3 slices cheddar cheese
  • 2 handfuls mozzarella cheese (approx. 50g)
  • 1 tsp sugar
  • 1 tsp salt
  • Pinch of black pepper

Cooking Instructions

Step 1

First, peel the potatoes thoroughly. Make sure to wash them well to remove any remaining dirt.

Step 1

Step 2

Using a mandoline slicer or a grater, thinly julienne the potatoes and carrot. Cutting them too thick will take longer to cook, so aim for uniform, thin strips.

Step 2

Step 3

This step is optional. For added flavor and color, you can include finely chopped chives. If you don’t have chives, feel free to skip this.

Step 3

Step 4

Immediately after julienning, place the potato strips in cold water and rinse them 2-3 times to remove excess starch. This will help make the pancake crispier and prevent the strips from sticking together.

Step 4

Step 5

Drain the potato strips well. Add the julienned carrot, (optional) chives, 2 Tbsp of flour, 1 tsp of salt, 1 tsp of sugar, and a pinch of black pepper. Mix everything thoroughly until well combined. Ensure all ingredients are evenly distributed.

Step 5

Step 6

Heat a frying pan over medium-low heat and add a generous amount of cooking oil. Scoop a portion of the mixture and place it in the pan, spreading it thinly and widely with a spoon or spatula. If the pancake is too thick, it might not cook through properly.

Step 6

Step 7

Once the edges of the pancake are golden brown and crispy, carefully flip it over. To make flipping easier, you can gently shake the pan beforehand to ensure the pancake isn’t sticking.

Step 7

Step 8

After the other side has cooked, it’s time to generously sprinkle mozzarella cheese on top. The melting cheese will create a wonderfully gooey texture.

Step 8

Step 9

Tear the cheddar cheese slices into pieces and place them over the mozzarella cheese. Finish with a sprinkle of dried parsley for an appealing look. Once the cheese is fully melted and combined with the potato strips, your ‘Crispy Cheese Potato Pancake’ is ready! It’s perfect as a snack for yourself with a drink or as a special treat for kids!
