  • 400-500g Carrots (about 2 medium-sized)
  • 1 Tbsp Whole Grain Mustard
  • 2 Tbsp Lemon Juice
  • 1 Tbsp Honey
  • 1/2 Tbsp Salt
  • 2 Tbsp Olive Oil

Cooking Instructions

Step 1

Prepare your fresh carrots. I used two medium-sized carrots. First, wash them thoroughly under running water. Then, use a peeler to remove the skin completely. Next, use a julienne slicer or a mandoline to cut the carrots into thin, long strips. If you don’t have a julienne slicer, slice them as thinly as possible with a knife for the best texture.

Step 2

Place the julienned carrots into a large bowl. Add 1/2 tablespoon of salt and gently toss them with your hands. Salting the carrots like this will help them soften slightly while retaining their crispness. Let them sit for about 10 to 15 minutes to allow some moisture to release.

Step 3

After about 10 minutes, once the carrots have softened a bit, it’s time to add the dressing ingredients. Add 1 tablespoon of whole grain mustard, 2 tablespoons of flavorful olive oil, 1 tablespoon of honey for sweetness, and 2 tablespoons of lemon juice for that refreshing tang. Add all of these to the bowl with the carrots.

Step 4

Gently mix everything together with your hands until well combined. Be careful not to overmix, so the carrots remain pleasantly crunchy. Toss lightly to ensure the dressing coats all the carrot strands evenly.

Step 5

The carrot rapa is delicious right after mixing, but it becomes even more flavorful and developed if you let it chill in the refrigerator for about a day. Transfer the finished carrot rapa into an airtight container and store it in the fridge. Spread it on bread for a sandwich, or serve it alongside salads for a wonderfully healthy meal!
