How to Make Crispy Candied Sweet Potatoes Using an Air Fryer with Leftover Sweet Potatoes
Still have sweet potatoes leftover at home? While we’ve been enjoying them as baked sweet potatoes from the air fryer, it’s time for a change! I’m sharing a recipe for a unique snack: ‘Goguma Bbas,’ which are crispy on the outside and tender on the inside, made effortlessly with your air fryer. It’s a perfect, delightful treat for kids and adults alike. Let’s create sweet moments with this irresistible snack!
Ingredients for Candied Sweet Potatoes- 1 medium sweet potato (preferably Korean pumpkin sweet potato)
- 3 Tbsp cooking oil
- 3 Tbsp sugar
- A pinch of black sesame seeds
Cooking Instructions
Step 1
First, peel the sweet potato thoroughly. Then, using a peeler, thinly slice the sweet potato into strips. Slicing them thinly will help them cook faster and absorb the sauce better, making them much tastier. Place the sliced sweet potato in cold water for about 10 minutes to remove excess starch. Removing the starch prevents them from sticking together when fried or baked and helps achieve a crispier texture.
Step 2
Drain the sweet potato strips that were soaked in water completely. Any remaining moisture can cause oil splatter or make the exterior soggy. It’s important to pat them dry thoroughly, perhaps with paper towels.
Step 3
Take 2-3 strips of the dried sweet potato, roll them up together, and thread them onto skewers, like making a mini sushi roll. Skewering them makes them easier to handle in the air fryer, simplifies the process of coating them with the sauce later, and results in a more attractive presentation. While you can skip this step if you don’t have skewers, they certainly make the process more convenient.
Step 4
Drizzle cooking oil (or olive oil for added flavor) evenly over the skewered sweet potatoes. Place them in the air fryer basket and bake at 180°C (350°F) for about 15 minutes until they are lightly golden brown. Flipping them halfway through will ensure they cook evenly and achieve a delicious finish. Adjust the cooking time based on the size of your sweet potato pieces and your air fryer’s specifications.
Step 5
While the sweet potatoes are baking, prepare the sauce. In a frying pan, combine 3 tablespoons of cooking oil and 3 tablespoons of sugar. Crucially, **do not stir them** at this stage. Let them sit undisturbed. The sugar will begin to melt and caramelize gradually. Cook over medium-low heat to prevent burning.
Step 6
Once the sugar in the pan has melted and turned into a light brown caramel, carefully remove the sweet potato skewers from the air fryer and add them to the pan. Quickly toss them to coat all sides evenly with the caramel. Be mindful not to overcook, as the caramel can burn easily.
Step 7
Allow the coated sweet potato skewers to cool slightly. While they are delicious when warm, letting them cool a bit will allow the caramel to harden, resulting in an even crispier texture.
