Instead of a full meal, I decided to make something quick and satisfying using leftover bread. I’ve made a popular ‘street toast’ and a simple buttered toast treat with the remaining slices. This recipe offers two delightful ways to enjoy bread: a hearty street toast packed with vegetables and a delightfully crispy, buttery snack.

Hearty Street Toast Ingredients

  • 2 slices of bread
  • 1 red chili pepper
  • 1/2 green onion stalk
  • 3 perilla leaves (optional)
  • 1 large lettuce leaf
  • 1/4 small onion
  • 1 egg
  • Pinch of salt
  • 1 tablespoon butter
  • Tomato ketchup, to taste
  • Pinch of black pepper

Simple Leftover Bread Butter Toast Ingredients

  • About 8 leftover bread crusts/pieces
  • 3 tablespoons butter
  • Parsley flakes, for garnish (optional)

Cooking Instructions

[Street Toast] First, prepare the vegetables for the street toast. Wash and thoroughly dry the lettuce, perilla leaves, green onion, and red chili pepper. Finely julienne all the vegetables. Also, thinly slice the onion. The finer you cut the vegetables, the better they’ll incorporate into the batter and the softer the texture will be.

In a bowl, combine all the julienned vegetables. Crack in 1 egg, add a pinch of salt, and a dash of black pepper to season. Mix everything together with chopsticks or a whisk until well combined. The mixture shouldn’t be too watery; the vegetables should be well-coated with the egg mixture.

Melt 1 tablespoon of butter in a heated frying pan over medium heat. Place the 2 slices of bread in the pan and toast them until golden brown on both sides. This buttery, warm bread will form the base of your toast.

While the bread is toasting, heat a little more butter in another frying pan (or the same one after wiping it clean). Ladle in about half of the vegetable and egg mixture and spread it into a circular shape, roughly the size of your bread. Cook over low heat until the bottom is set and golden brown.
