Craving a delicious buchujeon on a rainy day? This iconic Korean dish, known for its satisfying crunch, is a must-try! I’ll show you how to easily make incredibly crispy and flavorful buchujeon at home, just like the ones you get at restaurants.
Main Ingredients- 1 bunch fresh chives
- 3 Korean green chili peppers (cheongyang)
- 1/2 medium onion
- 1/2 red chili pepper (for color)
Cooking Instructions
Step 1
In a large bowl, add a generous amount of Korean pancake mix. Sprinkle a tiny pinch of salt for flavor enhancement, and crack in one fresh egg. Prepare the ingredients to be well combined.
Step 2
Now, it’s time to achieve the perfect batter consistency by gradually adding water. The ideal batter should be pourable, flowing smoothly when lifted with a spoon. Remember, a thinner batter is the key to achieving that super crispy texture for your buchujeon!
Step 3
Wash the fresh chives thoroughly under running water. Once drained, cut them into manageable pieces, about 4-5 cm (around 2 inches) long. Add all the prepared chives to the batter bowl. Allow the chives’ fresh aroma to mingle with the batter.

Let’s add onions to make our buchujeon even more delicious! Thinly slice half to one medium onion into strips. Add these sliced onions to the bowl with the chives and mix well. The natural sweetness of the onion will enhance the overall flavor profile of the pancake.

Finally, prepare the Korean green chilies (cheongyang) and red chilies for a touch of heat and vibrant color. Remove the seeds and finely chop them. Add them to the bowl and mix everything together thoroughly. Your delicious buchujeon batter is now ready!

Heat a pan over medium heat and add a generous amount of cooking oil. Ladle the buchujeon batter onto the hot pan and spread it out as thinly as possible. Spreading the batter thinly is crucial for achieving that wonderfully crispy texture as it fries.

Pan-fry until golden brown on both sides, then transfer the buchujeon to a plate. Look at that perfectly thin and crispy pancake! In the Daegu region of Korea, it’s customary to enjoy buchujeon with a spicy and sweet ‘chojang’ (vinegar-based chili dipping sauce). While soy sauce is also delicious, we highly recommend trying it with ‘chojang’ this time for a delightful twist!
