Crispy Broccoli Salad with Savory Miso Dressing
A Refreshing Way to Enjoy Broccoli! Super Simple, Healthy, Low-Sodium: Broccoli Salad with Miso Dressing
Broccoli is one of those staple ingredients that’s almost always in our fridge. However, eating it the same way every day can get a bit boring. I’ve created a new dressing that will change your perception that healthy food lacks flavor. Since it’s low-sodium, it’s best enjoyed immediately after mixing. If you let it sit, the flavors can become less pronounced, so it’s best to make just enough for one serving to enjoy at its peak deliciousness!
Main Ingredients- 3 small heads of broccoli (approx. 900g)
- 1 tsp salt (for blanching)
- Water (enough to cover broccoli) (for blanching)
Savory Miso Dressing- 1 Tbsp miso paste
- 1 Tbsp soy sauce
- 2 Tbsp toasted sesame seeds (ground) or sesame paste
- 2 Tbsp vinegar
- 2 Tbsp honey
- 2 Tbsp milk
- 1 Tbsp miso paste

Cooking Instructions
Step 1
First, prepare the broccoli. Trim the florets and rinse them a couple of times in lukewarm water mixed with a little baking soda to help remove any pesticides or impurities. Bring a pot of water to a rolling boil, add 1 teaspoon of salt, and then add the prepared broccoli. Blanch for about 3 minutes only – avoid overcooking, as it will become too soft! Immediately drain the blanched broccoli in a colander to remove excess water completely. Step 2
Now, let’s make the dressing. If you have ground sesame seeds (sesame paste), you don’t need a blender! However, if you’re using whole toasted sesame seeds, place all the dressing ingredients (miso paste, soy sauce, toasted sesame seeds, vinegar, honey, and milk) into a blender or food processor. Blend until smooth and well combined. Ensure all ingredients are thoroughly incorporated into a creamy texture.
Step 3
Pour the smoothly blended, delicious miso dressing over the blanched broccoli.
Step 4
Now it’s time to mix everything together. Put on a pair of disposable gloves and gently toss the broccoli with your hands, or hold the bowl and shake it lightly to ensure the dressing coats the broccoli evenly. The key is to get the dressing distributed thoroughly over each floret.
Step 5
Finally, transfer the well-mixed broccoli salad to a serving dish. You’re all set to enjoy the wonderful combination of crunchy broccoli and the rich, savory miso dressing!
