- Pinch of Black pepper (to taste)
- 1 Tbsp Perilla oil (for a nutty finish)
- 1 tsp Minced garlic
- 1 Tbsp Oyster sauce (for rich umami flavor)
- 1 Tbsp Maesil-cheong (Korean plum extract, for sweetness and glaze)
- 1 Tbsp Mirin (or cooking wine, to remove any fishy odors)
- Pinch of Black pepper (to taste)
- 1 Tbsp Perilla oil (for a nutty finish)
Cooking Instructions
Step 1
Begin by washing the broccoli thoroughly. Cut it into bite-sized florets. Slice the king oyster mushroom and dice or thinly slice the onion. Prepping your ingredients before you start cooking makes the process much smoother and more enjoyable.
Step 2
Prepare the cooked clam meat. If you are using pre-cooked clam meat, simply drain any excess liquid. This will ensure the clams are tender and flavorful in the stir-fry.
Step 3
If you enjoy a bit of heat, finely chop the Cheongyang pepper (or your preferred chili pepper). Remove the stem and seeds if you prefer less spice. This will add a wonderful spicy note to the dish.
Step 4
Heat the cooking oil in a pan over medium-low heat. Add the minced garlic and sliced onion. Sauté for about 2-3 minutes until the onions become translucent and the garlic is fragrant. This step builds the aromatic foundation of the dish.
Step 5
Increase the heat to medium-high and add the sliced king oyster mushrooms and broccoli florets to the pan. Stir-fry for 1-2 minutes. It’s best to keep the broccoli slightly crisp for the best texture. If you prefer softer broccoli, you can blanch it briefly before adding.
Step 6
Add the oyster sauce, Maesil-cheong, mirin, and a pinch of black pepper to the pan. Stir everything together quickly to coat the ingredients evenly with the sauce. Cook for another minute until the sauce slightly thickens and coats the vegetables.
Step 7
Finally, add the cooked clam meat and chopped Cheongyang pepper. Drizzle with perilla oil for a nutty aroma. Stir-fry gently for just another 30 seconds to combine all the flavors without overcooking the clams. Overcooking can make the clams tough.
Step 8
Transfer the delicious Broccoli and Clam Stir-fry to a serving plate. This dish is fantastic served hot with a side of steamed rice, or as a flavorful appetizer. Enjoy the vibrant flavors and satisfying textures!
