Crispy Bok Choy Salad Recipe
Fresh & Crunchy Bok Choy Salad – Quick & Easy!
This recipe uses bok choy, a popular Chinese vegetable, to create a refreshing and crunchy side dish. Lightly blanched bok choy offers a crisp texture and clean flavor, making it a delightful addition to any meal.
Main Ingredients- 250g Bok Choy (about 3-4 heads)
- Pinch of Salt (for blanching)
Seasoning Ingredients- 1 tsp Minced Garlic
- 1 Tbsp Finely Chopped Scallions (use mostly the white parts)
- 1/2 Tbsp Soy Sauce (regular or light)
- 1 tsp Fish Sauce (or substitute with more soy sauce if unavailable)
- 1/2 Tbsp Gochugaru (Korean chili flakes; adjust to your spice preference)
- 1 Tbsp Plum Extract (for sweetness and shine)
- 1/2 Tbsp Perilla Oil (for a nutty aroma)
- 1 tsp Toasted Sesame Seeds (for garnish)

Cooking Instructions
Step 1
Prepare the fresh bok choy. First, trim off the tough bottom ends of the bok choy with a knife. If the leaves are very large, you can cut them in half for easier eating.
Step 2
Fill a deep pot with plenty of water and bring it to a rolling boil over high heat. Once the water is boiling, add a pinch of salt (about 1/2 teaspoon per liter of water). Add the prepared bok choy and blanch for a very short time, about 30 to 40 seconds. Be careful not to overcook, as it will become mushy. Immediately remove the blanched bok choy and rinse it under cold running water to stop the cooking and maintain its crispness.
Step 3
Gently squeeze out excess water from the bok choy after rinsing it in cold water. Avoid squeezing too hard, as this can release a raw flavor. Place the squeezed bok choy in a mixing bowl. Add all the seasoning ingredients listed in the ‘Seasoning Ingredients’ section (minced garlic, chopped scallions, soy sauce, fish sauce, gochugaru, plum extract, perilla oil). Gently mix everything together with your hands until the seasonings are evenly distributed. Taste and adjust the seasoning if needed, according to your preference.
Step 4
Transfer the well-mixed bok choy salad to a serving dish. Sprinkle with toasted sesame seeds for a final garnish, making it even more aromatic and appealing. This dish is a great side for rice or can be enjoyed as a refreshing salad.
