Main Ingredients- 1 bag bean sprouts (approx. 200-300g)
- 1 handful winter greens (substitute with young spinach or baby bok choy leaves)
Seasoning- 1/2 Tbsp soy sauce or salt (adjust to taste)
- 1 Tbsp sesame oil
- 1/2 tsp minced garlic (optional)

Cooking Instructions
Step 1
First, prepare the bean sprouts and winter greens. Wash the bean sprouts thoroughly under running water and drain. Similarly, wash the winter greens carefully.
Step 2
Bring a generous amount of water to a rolling boil in a pot over high heat. While the water is boiling, lightly rinse the prepared bean sprouts and winter greens in a colander.
Step 3
Once the water is boiling vigorously, add the bean sprouts and blanch them very briefly. It’s important to maintain their crispiness, as overcooked bean sprouts become mushy. Blanch for about 30 seconds to 1 minute, then immediately drain and rinse under cold water to stop the cooking.
Step 4
Add the winter greens to the same boiling water after removing the bean sprouts. Blanch them for an even shorter time, about 20-30 seconds, just until they wilt slightly, as they are very delicate.
Step 5
After blanching, gently squeeze out the excess water from the winter greens with your hands. Then, cut them into bite-sized pieces (about 3-4 cm long). Be careful not to squeeze too hard, as this can release a grassy flavor.
Step 6
In a large bowl, combine the drained bean sprouts and chopped winter greens. Add the seasoning ingredients: soy sauce (or salt), sesame oil, and minced garlic. Adjust the amounts according to your preference.
Step 7
Now, gently mix everything together with your hands, ensuring the seasonings are evenly distributed. Avoid overmixing, which can crush the vegetables. Gently toss until well combined. Your crispy and fresh bean sprout salad is ready! It’s delicious to eat right away and makes a perfect side dish for lunchboxes.
