Main Ingredients- Fresh Bean Sprouts 250g
- Aromatic Enoki Mushrooms 1 pack
- Garlic Cloves 6
Seasoning & Aromatics- Cooking Oil 1 Tbsp
- Sesame Oil 1 Tbsp
- Toasted Sesame Seeds 1 Tbsp
- Black Pepper (approx. 0.5 Tbsp)
- Salt (approx. 0.5 Tbsp)

Cooking Instructions
Step 1
Prepare the enoki mushrooms by trimming off the tough, woody base (about 1-2 cm). Gently separate the mushroom clusters with your fingers into manageable portions. Be careful not to break them apart too much.
Step 2
Peel the 6 garlic cloves and slice them thinly into ‘coins’ or ‘chips’. This will help release their fragrant aroma during cooking.
Step 3
While you prepare the mushrooms and garlic, rinse the bean sprouts under cold running water a couple of times. Drain them well. You can trim off the root ends if desired, but it’s optional.
Step 4
Heat 1 Tbsp of cooking oil in a pan over medium-low heat. Add the sliced garlic and sauté until it’s lightly golden and fragrant. This process infuses the oil with a delicious garlic flavor. Avoid adding sesame oil at this stage, as its delicate aroma can be lost with prolonged cooking.
Step 5
Once the garlic is fragrant, add the drained bean sprouts to the pan. Increase the heat to medium and stir-fry quickly until the bean sprouts are slightly wilted but still retain a pleasant crunch. Overcooking will make them mushy.
Step 6
When the bean sprouts begin to turn slightly translucent, add the prepared enoki mushrooms to the pan. If the pan seems dry, add the remaining 1 Tbsp of cooking oil now.
Step 7
Stir-fry everything together vigorously until the enoki mushrooms have softened and are well combined with the bean sprouts. Enoki mushrooms cook very quickly, so avoid overcooking them.
Step 8
Once the ingredients are cooked to your liking and evenly mixed, turn off the heat. Stir in 1 Tbsp of sesame oil, a pinch of salt (about 0.5 Tbsp), and a pinch of black pepper (about 0.5 Tbsp). The residual heat will continue to cook the ingredients slightly. Taste and adjust the seasoning as needed.
Step 9
Sprinkle the black pepper over the stir-fry for an extra layer of aroma.
Step 10
Transfer the delicious bean sprout and enoki mushroom stir-fry to a serving dish. Sprinkle generously with 1 Tbsp of toasted sesame seeds for added texture and visual appeal. Enjoy this delightful and healthy side dish that even children will love! ♡
