  • 1 bowl of freshly cooked warm rice
  • A pinch of salt (for boiling bean sprouts)

  • 8 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 1.5 Tbsp gochugaru (Korean chili flakes – adjust for spiciness)
  • 1 Tbsp plum extract (for sweetness and flavor)
  • 5 Tbsp water (to adjust sauce consistency)
  • A little chopped green onion
  • 1 Tbsp sesame seeds (for nutty flavor)

First, carefully clean the bean sprouts. Remove any dirty or damaged heads or tails. Check if any stems are bruised. (If you prefer a crispier texture, removing the heads is recommended.)

Fill a pot with plenty of water, add a pinch of salt for seasoning, then add the bean sprouts and boil for 5-6 minutes. To prevent a fishy smell, either keep the lid on from the start or keep it completely off while boiling. Cook until the bean sprouts are just wilted.

Drain the boiled bean sprouts using a colander and rinse them briefly under cold water to cool them down. This step helps to make the bean sprouts extra crispy and keeps their fresh color.
