Gently rinse the fresh bean sprouts under running water. Wash them thoroughly to remove any dirt or impurities, then drain them well in a colander. This ensures the salad won’t be watery and will have a better texture.

Wash the radish, peel it, and then thinly julienne it to a similar thickness as the bean sprouts. If the strips are too thick, they will take longer to cook. Thinly slicing is key to achieving a nice, crisp texture! The goal is to maintain the radish’s refreshing crunch.

Place the prepared bean sprouts and julienned radish together in a wide pot or wok. This combination is excellent for neutralizing any potential gaminess from the bean sprouts and enhancing the radish’s natural sweetness.

Cooking with the lid on allows the bean sprouts’ natural moisture to help cook everything, which is very effective.
