  • 2 sticks Imitation Crab Meat (cut into bite-sized pieces)
  • 3 stalks Scallions (cut into 5cm lengths)
  • 20g Carrot (julienned)
  • 1 Tbsp Coarse Salt (for blanching bean sprouts)

Seasoning

  • 1 Tbsp Tuna Extract or Soy Sauce (for umami)
  • Pinch of Salt (for final seasoning adjustment)
  • 1.5 Tbsp Sesame Oil (for nutty aroma)
  • Pinch of Sesame Seeds (for garnish)

Cooking Instructions

First, prepare all the vegetables and imitation crab. Wash the scallions and cut them into approximately 5cm lengths. Julienne the carrot thinly. Cut the imitation crab sticks into 3 pieces, then halve each piece for bite-sized portions. Prepping the ingredients like this will make the cooking process much smoother.

In a pot, bring plenty of water to a boil and add 1 Tbsp of coarse salt. Once the water is boiling vigorously, add the washed bean sprouts and blanch them for about 30 seconds to 1 minute, aiming for a crisp texture. Be careful not to overcook the bean sprouts, as they can become mushy. After draining, it’s best not to rinse them with cold water; simply let them drain.

If you still have boiling water from blanching the bean sprouts, you can use it. Add the prepared scallions, imitation crab, and julienned carrots to the boiling water and blanch for about 1 minute. Be cautious not to overcook the vegetables until they are too soft, as maintaining a crisp texture is important. Quickly drain the blanched ingredients and remove any excess water.

Now it’s time to bring all the prepared ingredients together. In a large mixing bowl, combine the blanched bean sprouts, scallions, imitation crab, and carrots. Ensure the bowl is large enough for the ingredients to be mixed evenly.

It’s time to mix everything deliciously. Add the seasoning ingredients to the bowl: 1 Tbsp of tuna extract (or soy sauce) and 1.5 Tbsp of sesame oil. Gently toss the ingredients with chopsticks or your hands, ensuring the seasoning coats every piece evenly. Avoid mixing too vigorously, as this can mash the bean sprouts; mix gently and carefully.
