Main Ingredients- 2 medium potatoes
- 12 strips of bacon
- 1/2 onion
- 2 button mushrooms
- 3 Tbsp all-purpose flour
- 1 Tbsp butter
- 1/2 tsp salt
- Pinch of black pepper
- Olive oil, for cooking

Step 1
First, let’s prepare the vegetables that will add a wonderful aroma and flavor to our bacon-wrapped potatoes. Finely mince the onion and the button mushrooms. Mincing them helps all the flavors meld together beautifully.
Step 2
Wash the potatoes thoroughly. Cut them into bite-sized cubes. Place the cubed potatoes in a microwave-safe bowl, cover with plastic wrap, and poke a few holes. Microwave for about 6 minutes, or until they are tender and easily mashable. This step ensures the potatoes are soft all the way through, making them easy to mash.
Step 3
Heat a pan over medium heat and add a little olive oil. Sauté the minced onion and mushrooms until they become translucent and tender. Sautéing them well will bring out their natural sweetness and umami.

Once the potatoes are cooked, take them out while they’re still warm and mash them thoroughly. In a bowl, combine the mashed potatoes with the sautéed onions and mushrooms. Add 1 tablespoon of butter for richness and 3 tablespoons of all-purpose flour to help bind everything together. Season with 1/2 teaspoon of salt and a pinch of black pepper. Mix well and divide the mixture into 3 equal portions, shaping each into a ball or patty.

Now it’s time to wrap the potato mixture with bacon. On a clean surface, lay out 4 strips of bacon in a criss-cross (X) pattern. Place one of the potato mixture portions in the center of the bacon. Carefully fold the bacon strips over the potato mixture to fully enclose it.
