The fantastic combination of crispy on the outside, tender on the inside potatoes and savory bacon is truly delightful. It’s surprisingly simple to make, so anyone can follow along with ease.   • 5 potatoes (smaller than your fist)
  • 2 packs bacon (total 90g)
  • 1 onion
  • 1 Tbsp minced garlic
  • 1/2 Tbsp salt
  • Pinch of black pepper
  • A little olive oil (if needed)

Cooking Instructions

First, prepare 5 potatoes. Potatoes smaller than your fist will have the best texture when stir-fried. (Tip: When I julienned the potatoes, it seemed like a lot. For 1 pack of bacon, about 3-4 potatoes might be more suitable. If you reduce the potato quantity, adjust the amounts of onion, garlic, and salt accordingly.)

Wash the potatoes thoroughly, peel them, and then julienne them into bite-sized pieces, about 0.5 cm thick. Soak the julienned potatoes in cold water for about 5 minutes to remove excess starch. Afterward, drain them completely in a colander. This step will help the potatoes become crispier when cooked.

Julienne 1 onion to a similar thickness as the potatoes and set aside.

I’ve prepared 2 packs of bacon (approximately 90g). You can adjust the amount to your preference.

Cut the bacon into pieces about 1-2 cm wide. Then, place the cut bacon in a heated pan without any added oil and stir-fry it. Cooking it slowly over medium-low heat until it renders its own fat will enhance its savory flavor. We’re starting the stir-fry process with the rendered bacon fat.

Once the bacon fat has rendered, add 1 Tbsp of minced garlic and stir-fry until fragrant. When the garlic aroma starts to release, add the julienned onion and sauté until it becomes translucent.

Now, add the drained, julienned potatoes to the pan. Stir and mix well while stir-frying. Once the potatoes begin to soften slightly, add 1/2 Tbsp of salt for seasoning. (This is about half a tablespoon using a standard rice spoon.) Depending on how fatty your bacon is, you might want to add a little olive oil. If your bacon is mostly lean, the pan can get quite dry, so adding a bit more oil would be beneficial.

Finally, sprinkle with a pinch of black pepper. Continue to stir-fry until all ingredients are fully cooked and the flavors have melded beautifully. Your delicious Bacon and Potato Stir-Fry is ready! It tastes best when served hot.
