This salad features a special dressing made with the trendy ingredient peanut butter, combined with refreshing lemon juice and nutty black sesame seeds and bean powder. Main Ingredients- 1 handful shredded cabbage
- 1 handful shredded carrot
- 1/2 to 1 apple
Peanut Butter Dressing Ingredients- 1 tsp peanut butter (use 100% peanut content)
- 1 Tbsp lemon juice
- 1 tsp allulose (liquid)
- Black sesame seeds
- 1 tsp black bean powder mix (or soy milk mix)
- 2 pinches salt
- 1 Tbsp water

Cooking Instructions
Step 1
Wash the apple thoroughly using baking soda or coarse salt to remove any residue from the peel. Pat it dry, then carefully remove the core and thinly julienne the apple, including the peel.

Julienne the cabbage and carrot to a similar thickness as the apple. Rinse them and thoroughly pat dry. Place the julienned cabbage, carrot, and apple in a bowl.

Julienning cabbage and carrots with a mandoline and storing them in a zip-top bag in the refrigerator makes them incredibly convenient to use whenever needed. For cabbage, after julienning, you can rinse it in a colander, shake off excess water, and let it air dry for 1-2 hours before storing to keep it fresh for longer.

Now, let’s make the delicious peanut butter dressing! In a separate bowl, combine 1 teaspoon of peanut butter (using 100% peanut product will enhance the flavor), 1 tablespoon of lemon juice, and 1 teaspoon of liquid allulose. Add black sesame seeds and 1 teaspoon of black bean powder mix for extra nuttiness.
**[Ingredient Substitution Tip]**
If you don’t have black bean powder, perilla seed powder makes a great substitute. You can also adjust the amount of allulose or use honey or other liquid sweeteners to suit your preferred level of sweetness.
