Step 1

First, wash the zucchini thoroughly and pat it dry. Then, slice it as thinly as possible, about 3-4mm thick. Slicing them thinly will result in a crispier texture.

Arrange the thinly sliced zucchini on a wide plate, ensuring they don’t overlap too much. Sprinkle herb salt evenly over the entire surface, making sure no spots are missed.

Step 3

Cover the plate with plastic wrap and refrigerate for 30 minutes to 1 hour. This process will draw out excess moisture from the zucchini, making them more tender and less watery when cooked. Afterward, gently press them with paper towels to absorb any surface moisture and excess salt. This step is crucial for achieving crispy fritters.

Step 4

Now, let’s prepare the batter. Spread 1 cup of pancake mix thinly on another plate. In a separate bowl, beat 2 eggs. (Tip: If you prefer not to have a foamy texture or want to season the batter, add about two pinches of salt to the eggs. Alternatively, if you’re not keen on the egg wash, you can simply sprinkle a little salt directly onto the cooked fritters just before serving.)

Step 5

Heat a generous amount of cooking oil in a pan over medium heat. Once the oil is shimmering, lightly coat each slice of zucchini (drained of moisture) with the pancake mix, then dip it into the beaten egg. Carefully place the egg-coated zucchini slices into the hot oil. Fry for about 2 minutes per side, or until a light golden brown color appears. Be mindful of the heat to prevent burning. The goal is a beautiful, even tan.

Once cooked, transfer the zucchini fritters to a plate lined with paper towels. Place another paper towel on top of the fritters and gently press down. This helps to absorb any excess oil, resulting in a cleaner taste and texture. Press lightly to avoid crushing the delicate fritters.
