Fried to perfection, these cutlets are never greasy, offering a tender texture that is sure to be a hit. Main Ingredients- 500g domestic fresh halibut fillet
- Pinch of black pepper (for sprinkling)
- 2 handfuls of pancake mix or all-purpose flour
- 1 fresh egg
- 300g panko breadcrumbs
- Small amount of cooking oil for frying
Cooking Instructions
Step 1
First, prepare the fresh domestic halibut fillet. You can easily find this at seafood markets or online. Rinse it thoroughly, pat it dry, and cut it into pieces suitable for cooking.

Lightly sprinkle freshly ground black pepper over the prepared halibut pieces. Pepper helps to remove any fishy odor and enhances the overall flavor.

After gently patting the halibut dry, take about a handful of pancake mix (or all-purpose flour) and evenly coat both sides of the fish. Aim for a thin layer of flour.

In a separate bowl, crack one fresh egg and whisk it well. Dip the flour-coated halibut pieces into the beaten egg, ensuring they are evenly coated. The egg wash will help the breadcrumbs adhere better.
Step 5
Spread the panko breadcrumbs generously on a wide plate. Place the egg-washed halibut pieces onto the panko and cover them with more breadcrumbs. Gently press down with your hands to ensure the breadcrumbs stick all over. Coating generously will result in a crispier cutlet.
Step 6
Heat a generous amount of cooking oil in a frying pan over medium heat. Once the oil is hot enough (a small piece of panko dropped in should sizzle and float immediately), carefully place the prepared halibut cutlets into the oil. Fry them until golden brown on both sides. Be cautious not to fry them on excessively high heat, as this can burn the outside before the inside is cooked.

Once golden brown and cooked through, remove the halibut cutlets from the oil and place them on paper towels to drain excess oil. Serve the warm, crispy halibut cutlets with store-bought tartar sauce or your favorite dipping sauce.
