Crispy and Tender Fried Sea Bream
Crispy on the outside, tender on the inside – Fried Sea Bream made with succulent sea bream fillets.
A nutritious snack made with soft sea bream fillets.
Main Ingredients- Fresh sea bream fillets 210g (boneless and skinless)
- Pinch of black pepper
- 1 Tbsp cooking wine (or sake)
- 1/2 Tbsp minced garlic
- Pinch of ginger powder (or 1/2 tsp minced fresh ginger)
- Pinch of salt
Cooking Instructions
Step 1
Rinse the sea bream fillets and pat them dry. Carefully check for any remaining bones and cut the fish into bite-sized pieces, about 2-3cm. Place the cut fish in a bowl, add pepper, cooking wine, minced garlic, ginger powder, and a pinch of salt. Gently mix everything together and let it marinate for about 15 minutes. This step helps to remove any fishy odor and adds flavor.
Step 2
In a separate bowl, combine the cornstarch, egg white, and 60ml of water. Whisk until smooth to create a batter. If the batter seems too thick, you can add a little more water. Coat the marinated sea bream pieces evenly with this batter, ensuring each piece is well-covered.
Step 3
Heat a generous amount of cooking oil in a deep pan or wok to about 170-180°C (340-350°F). Carefully add the battered sea bream pieces one by one, making sure not to overcrowd the pan. Fry until golden brown and crispy. Remove the fried fish and drain excess oil on paper towels.
Step 4
For an extra crispy texture, you can double-fry the sea bream. Reheat the oil to 180-190°C (355-375°F) and fry the already fried fish for a short time again. This second fry will make the exterior exceptionally crisp while keeping the inside moist and tender.
Step 5
To make the sweet and sour sauce, combine soy sauce, plum syrup, vinegar, sugar, and 100ml of water in a pan. Bring to a boil over medium heat. Once boiling, add the sliced bell peppers, cucumber, onion, and green onion. Cook for another minute until the vegetables are slightly tender-crisp. Gradually stir in the cornstarch slurry (1 Tbsp cornstarch mixed with 2 Tbsp water) until the sauce reaches your desired consistency. Remove from heat.
Step 6
Arrange the crispy fried sea bream on a serving plate. Pour the warm sweet and sour sauce over the fish. Finish with a light drizzle of sesame oil for added aroma and flavor. Serve immediately to enjoy the delightful contrast of crispy exterior and tender interior.
