Homemade Chinese-Style Fried Eggplant Perfection!

For the Fried Eggplant- 1 medium eggplant
- 150g ground pork
- 1/2 green onion, finely chopped
- All-purpose flour, for coating
- 1 egg, for egg wash
- A pinch of coarse salt
- A pinch of black pepper
- A pinch of MSG (optional, for enhanced flavor)
- A pinch of chicken bouillon powder (optional, for enhanced flavor)
Chinese-Style Dipping Sauce- 1 tbsp soy sauce
- 1 tbsp vinegar
- 1/2 tbsp minced garlic
- 1/2 tbsp coarse chili flakes
- 1 to 1.5 tbsp Sprite or similar clear soda (for sweetness and shine)

Cooking Instructions
Step 1
First, let’s prepare the eggplant. Slice it into rounds about 1.5 cm thick. Then, carefully make a deep cut in the center of each slice, almost like a mouth opening. This shape helps the filling stay inside and creates a wonderful texture when fried. (For a clearer visual of how to cut the eggplant, please refer to the video!)

Now, let’s prepare the filling that will make these fried eggplants so delicious. Finely chop the green onion. In a bowl, combine the chopped green onion with the ground pork. Add all the ingredients for the Chinese-Style Dipping Sauce: soy sauce, vinegar, minced garlic, coarse chili flakes, and Sprite. Also, add the chicken bouillon powder and MSG (if using). You might think the amount of seasoning is small, but it’s perfectly balanced to complement the eggplant’s flavor. Step 3
Gently open the ‘mouth’ of each eggplant slice (where you made the cut) and generously stuff it with the prepared pork and green onion mixture. Make sure to fill them well so every bite is packed with flavor.
Step 4
Once the eggplants are stuffed, dredge them lightly in flour to help the egg wash adhere better. Next, dip each stuffed eggplant slice into the beaten egg, ensuring it’s fully coated. Now, heat your frying oil to about 170-180°C (340-350°F). Carefully place the coated eggplant slices into the hot oil and fry until they are golden brown and crispy.
