Make Delicious Dubu Gangjeong for a Satisfying Meal ♪
Hello everyone, this is Bebe Tokki Mom! My husband absolutely loves tofu, so I’ve tried countless tofu dishes. This time, I’ve made gangjeong, a sweet and savory Korean stir-fry, using tofu! It’s a fantastic dish that’s perfect as a side dish or even a light meal.
Main Ingredients- 1 block Firm Tofu (approx. 300-400g)
- Potato starch or frying powder, as needed
Sweet and Spicy Sauce- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Ketchup
- 2 Tbsp Soy Sauce
- 2 Tbsp Corn Syrup (adjust sweetness to taste)
- 1 Tbsp Minced Garlic
- Chopped Green Onions (optional)
- 1/2 Tbsp Sesame Oil
- Sesame Seeds, for garnish
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Ketchup
- 2 Tbsp Soy Sauce
- 2 Tbsp Corn Syrup (adjust sweetness to taste)
- 1 Tbsp Minced Garlic
- Chopped Green Onions (optional)
- 1/2 Tbsp Sesame Oil
- Sesame Seeds, for garnish
Cooking Instructions
Step 1
First, gently press the tofu between paper towels to remove as much moisture as possible. Properly draining the tofu is crucial for preventing oil splattering during frying and achieving a crispier texture. I lightly seasoned it with herb salt at this stage, but you can use regular salt or pepper if you prefer.
Step 2
While the tofu is draining, let’s prepare the delicious sauce. Combine all the sauce ingredients (gochujang, ketchup, soy sauce, corn syrup, minced garlic, chopped green onions, and sesame oil) in a bowl and mix well. (Tip: If you’re adding mushrooms, they release moisture, which can dilute the sauce. You might want to add a little oyster sauce for extra umami.)
Step 3
Cut the drained tofu into bite-sized pieces (about 2-3 cm). Place the cut tofu pieces into a resealable plastic bag. Add a generous amount of potato starch or frying powder and shake the bag to evenly coat each piece of tofu. This coating will help make the tofu extra crispy.
Step 4
Heat a generous amount of oil in a pan over medium heat. Add the starch-coated tofu pieces and pan-fry them until golden brown and crispy on all sides, similar to how you’d fry other ingredients.
Step 5
Once the tofu is golden brown, pour the prepared sauce into the pan.
Step 6
Reduce the heat to medium-low and let the sauce simmer, coating the tofu. Stir continuously to prevent the sauce from burning and to achieve a glossy finish. The goal is to have the sauce cling stickily to the tofu.
Step 7
Finally, sprinkle sesame seeds over the finished Dubu Gangjeong for a visually appealing and aromatic touch. The nutty sesame seeds will enhance the flavor. Enjoy your delicious meal!
