Main Ingredients- 1 medium potato
- 3 strips of bacon
- 1 Cheongyang chili pepper
- A small amount of carrot (about 1/4 of a carrot)
Seasoning & Others- 1/2 Tbsp salt (for potato seasoning) + a pinch to taste
- 2-3 Tbsp canola oil (or cooking oil)
- A pinch of toasted sesame seeds (for garnish, optional)

Cooking Instructions
Step 1
First, peel the potato and slice it thinly into sticks, about 0.5cm thick. Place the julienned potatoes in a bowl.

Add 1/2 Tbsp of salt to the potatoes and gently mix them. Let them sit for 5 minutes. This process draws out excess moisture, preventing the potatoes from becoming soggy when stir-fried, and allows them to absorb flavor.

While the potatoes are seasoning, prepare the other ingredients. Cut the bacon into strips about 1cm wide. Julienne the carrot to a similar thickness. Remove the stems from the Cheongyang chili pepper and finely chop it. (If you prefer less heat, remove the seeds or adjust the amount.)

Rinse the potatoes lightly under running water to remove the salt, then drain them thoroughly in a colander. Ensuring the potatoes are well-drained is key to achieving a crispy texture when stir-frying.

Heat 2-3 Tbsp of canola oil in a skillet over medium heat. Add the drained potatoes, julienned carrots, and chopped Cheongyang chili pepper. Season with a pinch of salt to taste.
