Instead of spicy tteokbokki, try enjoying tteokgangjeong that’s crispy on the outside and chewy on the inside! This recipe introduces tteokgangjeong with a perfect balance of sweet, sour, and spicy flavors that will captivate your taste buds. You can make a fantastic snack or appetizer at home with simple ingredients.
Main Ingredients- 500g Tteok (rice cakes for frying or tteokbokki)
Optional Ingredients for Extra Crispiness- A few frozen dumplings

Cooking Instructions
Step 1
If you are not using tteok specifically for frying, rinse tteokbokki tteok in cold water and drain them. Make sure the rice cakes don’t stick together. If you’d like to add dumplings, prepare them as well. Frying or stir-frying them with the rice cakes will add even more texture.
Step 2
Now, let’s make the key component of delicious tteokgangjeong: the sauce! In a small bowl, add 1.5 Tbsp of gochujang and 1.5 Tbsp of minced garlic. Using freshly minced garlic will significantly enhance the aroma.

Next, add 4 Tbsp of soy sauce for umami and 4 Tbsp of mirin to remove any gamey smell and add shine. Stir until all ingredients are well combined.

Add 8 Tbsp of oligodang for sweetness and 4 Tbsp of ketchup for a sweet and sour kick. Feel free to adjust the amount of oligodang according to your preference. If making this for children, you can reduce the gochujang and increase the oligodang for a milder flavor. Mix all ingredients thoroughly to complete the sauce.
Step 5
Pour a generous amount of cooking oil into a wide pan and heat over medium heat. Add the prepared tteok and dumplings (optional) and stir-fry until they are golden brown on the outside and soft on the inside. It’s important to cook them until they become tender, not too hard.
Step 6
Once the tteok and dumplings are cooked to your liking, pour the prepared sauce into the pan. Reduce the heat slightly to prevent the sauce from burning, and toss well to coat the tteok and dumplings evenly with the sauce.
Step 7
Continue to stir-fry over low heat for about 2-3 minutes, allowing the sauce to meld with the ingredients. Finally, add plenty of sesame seeds for a nutty flavor and stir lightly once more. Sesame seeds are a secret ingredient that elevates the taste of tteokgangjeong!

For an even richer and nuttier flavor, prepare some finely crushed nuts (like walnuts or peanuts) and sprinkle them generously over the top.
