Crispy and Sweet-Tangy Quick Radish Salad (Musaengchae)
[Large Batch Side Dish] Easy and Delicious Musaengchae Recipe
The ultimate simple side dish for when you have no appetite! Prepare a delicious Musaengchae with ease.
Main Ingredients- 300g Korean radish (about 1/4 medium radish)
- Scallions, to taste (about 3-4 stalks)
Seasoning Ingredients- 1/2 Tbsp coarse sea salt (for salting the radish)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp minced garlic
- 1 Tbsp plum extract (or syrup)
- 1/2 Tbsp sugar (brown sugar recommended)
- 1/2 Tbsp vinegar
- A pinch of toasted sesame seeds
- 1/2 Tbsp coarse sea salt (for salting the radish)
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1/2 Tbsp minced garlic
- 1 Tbsp plum extract (or syrup)
- 1/2 Tbsp sugar (brown sugar recommended)
- 1/2 Tbsp vinegar
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
Wash the fresh radish thoroughly, peel off the skin thinly, and then julienne it into strips about 0.3cm thick. If the strips are too thin, the texture can become mushy, so maintaining a moderate thickness is recommended.
Step 2
Place the julienned radish in a bowl and add 1/2 Tbsp of coarse sea salt. Gently mix and massage the radish for about 10 minutes to let it soften and release its moisture. This step helps the radish become crispier.
Step 3
Squeeze out the water released from the salted radish with your hands. Thoroughly draining the liquid is important so the seasoning adheres well and the salad doesn’t taste bland.
Step 4
Wash the scallions and trim off the root ends. Cut them into segments about 3-4cm long. If scallions are unavailable, you can use the white parts of a regular green onion, thinly sliced.
Step 5
Add the cut scallions to the squeezed radish. Now, add all the seasoning ingredients: 1 Tbsp Gochugaru, 1/2 Tbsp minced garlic, 1 Tbsp plum extract, 1/2 Tbsp sugar, 1/2 Tbsp vinegar, and a pinch of toasted sesame seeds. You can also add the sesame seeds at the very end.
Step 6
Gently toss everything together with your hands until the seasoning is evenly distributed. Be careful not to mix too vigorously, as this can break down the radish. Once the seasoning is well incorporated, transfer to a nice serving dish. Your delicious Musaengchae is ready!
