The Best Sweet Potato Pancake with Cheese for Kids’ Snacks and Drinks
Enjoy a delicious snack that everyone from kids to adults will love! This sweet potato pancake is made by thinly julienning sweet potatoes and frying them until crispy, then adding gooey mozzarella cheese. It’s easy to follow with simple ingredients.
Main Ingredients- 1 medium sweet potato
- 1 cup mozzarella cheese (about 100g)
- 1/2 Tbsp sugar
- 2 pinches of salt
- 5 Tbsp potato starch (or 3 Tbsp frying powder + 2 Tbsp all-purpose flour)
- Generous amount of cooking oil (approx. 2-3 Tbsp)
Cooking Instructions
Step 1
First, wash and peel 1 medium sweet potato. Peeling the skin will result in a smoother and cleaner tasting pancake.
Step 2
Julienne the peeled sweet potato as thinly as possible using a knife or a mandoline slicer. Thin slices cook faster and result in a better texture.
Step 3
Rinse the julienned sweet potato in cold water 2-3 times to thoroughly remove excess starch. Continue washing until the water runs clear. Then, drain completely in a colander. Ensuring it’s well-drained is crucial to prevent a soggy pancake.
Step 4
To the drained sweet potato shreds, add 1/2 Tbsp sugar, 2 pinches of salt, and 5 Tbsp potato starch. Mix well with your hands, ensuring the seasoning is evenly distributed and the shreds begin to stick together slightly.

The batter consistency should be thick enough so that when you lift some shreds, they clump together. If the batter is too thin, add a little more potato starch until you achieve the desired thickness.

Prepare about 1 cup of mozzarella cheese. You can increase the amount if you prefer more cheese.

Heat a frying pan over medium heat and add about 2 Tbsp of cooking oil. Using a generous amount of oil is recommended for a crispy pancake.

Once the pan is hot, spread the seasoned sweet potato mixture thinly onto the pan. You can shape it into a round or oblong form.

Cook one side until it turns golden brown and is well-cooked, about 3-4 minutes, then carefully flip it over.

Cook the other side until golden brown. Once cooked, flip it back again and then place the mozzarella cheese on only one half of the pancake.

Carefully fold the other half of the pancake over the cheese, creating a half-moon shape. Cook until the sweet potato is golden brown and the cheese is completely melted, ensuring the cheese doesn’t burn on the pan.
