Perfect Sweet Potato Fries for a Rainy Day Snack

Ingredients- 2 medium sweet potatoes
- 1 cup tempura flour
- 1 cup cold water
- Plenty of cooking oil (for deep frying)

Step 1
Begin by washing the sweet potatoes thoroughly. Peel them and then slice them into rounds about 0.5 cm thick or into long, finger-like sticks. Place the sliced sweet potatoes into a resealable bag and add 1 tablespoon of tempura flour. Seal the bag and shake gently to coat the sweet potatoes evenly. This coating helps the batter adhere better and makes the fries extra crispy.
Step 2
In a bowl, combine 1 cup of tempura flour with 1 cup of cold water. Whisk together using chopsticks or a whisk until smooth, ensuring there are no large lumps. Avoid overmixing; a few small lumps are perfectly fine and can contribute to a crispier texture.
Step 3
Add the flour-coated sweet potatoes to the prepared batter. Gently toss them to ensure an even coating of batter covers each piece. Lightly shake off any excess batter before frying for a cleaner finish.
Step 4
Pour a generous amount of cooking oil into a deep frying pan or pot. Heat the oil over medium heat. To test the oil temperature, drop a small amount of batter into the oil; it should sizzle and float to the surface immediately with steady bubbles.

Once the oil reaches about 170-180°C (340-355°F), carefully place the battered sweet potato pieces into the hot oil. Avoid overcrowding the pan, as this can lower the oil temperature. Fry the sweet potato fries in batches, turning them occasionally, until they are golden brown and crispy, usually about 3-4 minutes.
Step 6
Remove the fried sweet potato fries from the oil and place them on a wire rack lined with paper towels. This step helps to drain away excess oil, ensuring they are not greasy and are perfectly crisp. Serve immediately while warm for the best taste!
