How to Make Crispy and Sweet Kimchi with Fresh Onions
This kimchi is made with affordable and fresh spring onions, making it a delicious and easy-to-prepare side dish. It’s not too spicy and its natural sweetness and crisp texture are exceptional.
Main Ingredients- 4 fresh onions
- 1 stalk of green onion
Brining Liquid- 1 cup (200ml) water
- 1 tablespoon coarse salt
- 1 cup (200ml) water

Cooking Instructions
Step 1
Peel the fresh onions cleanly and rinse them under water. This step removes any dirt or impurities from the onion surface.
Step 2
Trim the root and top ends of the onions, then cut them into three large pieces. This size is ideal for the seasoning to penetrate well and for brining.
Step 3
Gently separate the pieces into individual layers, peeling them apart. This ensures the seasoning coats each layer evenly for a more delicious result.
Step 4
Dissolve 1 tablespoon of coarse salt in 1 cup (200ml) of water. Pour this brine over the separated onion pieces and let them sit for 20 minutes. This process softens the onions slightly while retaining their crispness.
Step 5
Wash the green onion and thinly slice it, separating the white and green parts. This will add a refreshing flavor and aroma to the kimchi.
Step 6
In a bowl, combine 2 tablespoons of anchovy sauce, 2 tablespoons of fine gochugaru, 1/2 tablespoon of minced garlic, 1/3 tablespoon of minced ginger, and 1 tablespoon of sugar. Mix well to create the seasoning paste. You can adjust the amount of gochugaru to your spice preference.
Step 7
After 20 minutes of brining, drain the excess brine from the onions and lightly rinse them. Gently pat them dry. Add the prepared seasoning paste and sliced green onions to the onions. Mix everything together gently, being careful not to mash the onions. Ensure the seasoning is evenly distributed.
Step 8
Transfer the well-mixed onion kimchi to a container. It’s ready to serve! The delightful crunch, the natural sweetness of the onions, and the savory seasoning create a dish that pairs perfectly with rice and will have you finishing your meal in no time. It can be enjoyed immediately, or aged for a day for a deeper, more developed flavor.
