  • 1 cup pancake mix (or tempura flour)
  • 1 pinch coarse salt
  • Generous amount of olive oil (for frying)
  • Mayonnaise (for dipping)

First, wash the carrot thoroughly. You can peel it or leave the skin on, depending on your preference. Slice the carrot into thin, long strips, similar to french fries, for easy eating. The thickness can be adjusted to your liking, but avoid making them too thick, as they will take longer to cook.

Place the julienned carrots in a bowl. Add the pancake mix and a pinch of coarse salt, then toss gently to coat the carrots evenly with the flour. Mix with your hands until the batter lightly coats each strand. You don’t need to add extra water, as the natural moisture from the carrots will help the batter adhere and create a crispy coating.

Heat a generous amount of olive oil in a frying pan over medium heat. Once the oil is hot, carefully add the coated carrots. Fry them, stirring frequently, until they are golden brown and crispy.
