Cooking Instructions
Step 1
First, prepare the bean sprouts. Remove any dirty or damaged bits, and trim the long roots with scissors for a better texture. Wash the bean sprouts thoroughly under running water about 3 times, then drain them well in a colander.
Step 2
Here’s the secret to boiling bean sprouts without a fishy smell! Bring a pot of water to a rolling boil. Add 1 tsp of coarse salt. Once the water is boiling, add the prepared bean sprouts. **Do not cover the pot!** When the bean sprouts float to the surface, gently stir them with a spatula. Once they boil up again, immediately remove them. Be careful not to overcook them, or they will become mushy.
Step 3
Drain the boiled bean sprouts in a colander. You can season them right away, but for an extra crispy texture, quickly rinse them under cold water, squeeze out the excess water, and then season. This step is crucial for maintaining crispiness.
Step 4
In a bowl with the drained bean sprouts, add the gochugaru and fish sauce (or soup soy sauce). Gently mix to coat the sprouts evenly.
Step 5
Add the minced garlic, toasted sesame seeds, and the finely chopped green onion to the bowl.
Step 6
Finally, drizzle in the sesame oil and gently mix everything together with your hands. Taste and adjust the seasoning with flaky salt if needed. Be careful not to over-mix, as it can make the bean sprouts mushy.
Step 7
Your crispy and spicy red seasoned bean sprouts are ready! They make a fantastic side dish.
Step 8
Transfer the finished seasoned bean sprouts to a serving plate and sprinkle with more toasted sesame seeds for an appealing garnish. This completes your delicious bean sprout dish. Many people find it challenging to make bean sprout salad perfectly crispy, but boiling them without a fishy smell is the most important step. Enjoy this recipe for delicious bean sprout seasoning at home!
