Main Ingredients

  • 8 fresh dried saury fish
  • Pinch of salt
  • Pinch of black pepper
  • 4 Tbsp tempura flour (or all-purpose flour)
  • Panko breadcrumbs, as needed
  • Vegetable oil, for frying

Wasabi Soy Dipping Sauce

  • 2 Tbsp soy sauce
  • 2 Tbsp water
  • 1 Tbsp vinegar
  • Wasabi paste, to taste

First, prepare all the ingredients needed for the recipe. Having the washed dried saury, tempura flour, breadcrumbs, and the dipping sauce ingredients ready will make cooking much smoother.

Preparing the dried saury is very simple! Start by trimming off the head and tail of the saury with clean scissors. Then, rinse them a few times under running water, giving them a quick wipe, and the preparation is complete without any mess. You don’t need to remove the innards before using them.

After preparing the saury, pat them dry and lightly season with salt and pepper. This enhances the natural flavor of the saury and helps the seasoning penetrate before coating.

Use paper towels to thoroughly pat the dried saury dry. If there’s excess moisture, the coating might not stick well. Once dry, lightly coat the saury with tempura flour. A thin layer of flour beforehand helps the batter adhere better.

In a bowl, combine the 4 Tbsp of tempura flour with water to make a batter. The batter consistency should not be too thick, but rather slightly runny – it should drip smoothly off a spoon. Coat the dried saury evenly with this batter.
