- 1 Tbsp olive oil
- 1 tsp cooking wine (mirin)
- 1 Tbsp corn syrup (adjust sweetness as desired)

- A little sesame seeds
- A little sesame oil
Cooking Instructions
Step 1
First, prepare a wide pan or wok. Once the pan is heated, add 1 tablespoon of olive oil and the 3 handfuls of fresh dried shrimp. Stir-fry over medium heat. This step helps to remove any fishy smell and enhance the nutty flavor of the shrimp. Continue stir-frying until the shrimp are slightly golden brown.
Step 2
Once the shrimp are somewhat cooked, add 1 teaspoon of cooking wine (mirin) to eliminate any remaining odor and stir-fry together. Next, add 1 teaspoon of oyster sauce and 1 tablespoon of corn syrup in order. Stir well to combine everything as you continue to stir-fry. Keep the heat at medium-low during this stage.
Step 3
Reduce the heat to low and stir-fry quickly to allow the sauce to penetrate the shrimp. It’s important to stir constantly to prevent burning. Continue stir-frying for about 1-2 more minutes. Finally, add a little chopped green onion and sesame seeds, and stir briefly to mix. Just before turning off the heat, drizzle a little sesame oil for an enhanced aroma.
Step 4
Transfer the well-stir-fried dried shrimp to a serving dish. It’s delicious served over warm rice or as a side dish. Enjoy your crispy and savory stir-fried dried shrimp!
