Main Ingredients- 1 handful of medium-sized anchovies (choose larger ones)
- 30 Korean chili peppers (Ggwari-gochu)
Seasoning Ingredients- 2 Tbsp Soy Sauce
- 2 Tbsp Cooking Wine (Mirin)
- 1 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Sugar
- 2 Tbsp Plum Extract
- 1 Tbsp Oligodang (Corn Syrup)
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
- 2 Tbsp Soy Sauce
- 2 Tbsp Cooking Wine (Mirin)
- 1 Tbsp Minced Garlic
- 1 Tbsp Gochugaru (Korean Chili Flakes)
- 1 Tbsp Sugar
- 2 Tbsp Plum Extract
- 1 Tbsp Oligodang (Corn Syrup)
- 1 Tbsp Sesame Oil
- 1 Tbsp Toasted Sesame Seeds
Cooking Instructions
Step 1
First, thoroughly remove the heads and innards from the anchovies. To get rid of any fishy smell, dry-roast them in a preheated pan over medium heat until fragrant, being careful not to burn them. Afterward, sift them through a sieve to remove any small crumbs for a cleaner finish.
Step 2
Wash the Korean chili peppers clean. If they are large, cut them into 2-3 bite-sized pieces. This size ensures the seasoning penetrates evenly, making them more flavorful.
Step 3
In a pot, combine all the seasoning ingredients except for the sesame oil and sesame seeds. Bring the mixture to a gentle boil to create a delicious sauce. Simmering the sauce beforehand helps the flavors meld and penetrate the ingredients better.

Add the prepared chili peppers to the sauce. Cook over medium-low heat, allowing the peppers to absorb the sauce thoroughly. The chili peppers will soften slightly while soaking up all the wonderful flavors.

Once the chili peppers have absorbed some of the sauce, add the roasted anchovies. Stir-fry quickly to coat the anchovies with the seasoning. Be gentle to avoid breaking the anchovies. Ensure they are evenly coated with the sauce.

When all ingredients are well-coated and nicely stir-fried, turn off the heat. Drizzle in the sesame oil and sprinkle with toasted sesame seeds for a fragrant finish. If you prefer a sweeter taste, you can add a little more oligodang at this stage to adjust the sweetness to your liking.
