Potato Pancake Batter Ingredients- 4 potatoes
- 6 frozen shrimp (thawed)
- 2 Tbsp potato starch
- 1 tsp salt
- 1 Tbsp minced scallions
- Sesame oil, for cooking
Dipping Sauce Ingredients- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 2 Tbsp vinegar
- 1/2 red chili pepper (seeds removed, finely minced)
- 1/2 green chili pepper (seeds removed, finely minced)
- 1 tsp plum extract
- 1 tsp minced garlic
- 1 Tbsp chopped green onions
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
- 1 Tbsp soy sauce
- 1 Tbsp fish sauce
- 2 Tbsp vinegar
- 1/2 red chili pepper (seeds removed, finely minced)
- 1/2 green chili pepper (seeds removed, finely minced)
- 1 tsp plum extract
- 1 tsp minced garlic
- 1 Tbsp chopped green onions
- 1 tsp sesame oil
- 1 tsp toasted sesame seeds
Cooking Instructions
Step 1
Peel the potatoes and cut them into small pieces so they blend easily. Place them in a blender and process until the potatoes are completely smooth and have no lumps.

Check that the potatoes are blended into a very smooth consistency without any chunks. This smoothness is key to achieving tender potato pancakes.

Pour the smoothly blended potatoes into a fine-mesh sieve or a cheesecloth to drain excess liquid. It’s important not to squeeze out all the moisture; a little bit of moisture remaining will ensure the finished pancakes are moist rather than dry and crumbly.

Carefully pour off the clear water from the top, leaving behind the rich starch. The amount of starch will vary depending on the potatoes used. It’s best to wait at least 10 minutes for the starch to fully settle.

Combine the collected settled starch with the drained potatoes in the mixing bowl. While you could cook them as is, adding a little extra potato starch will help bind the batter and improve its consistency, making it easier to form.

Add the extra potato starch and salt to the mixture. Stir everything together thoroughly until well combined. This step ensures that even beginners can easily make beautifully shaped potato pancakes. While a dipping sauce is delicious, a slight seasoning in the batter itself enhances the natural savory flavor of the potatoes.

Heat a pan over medium heat and add a generous amount of cooking oil. Spoon the potato pancake batter into the hot pan, forming round pancakes of your desired size. Arrange the thawed frozen shrimp and finely chopped scallions attractively on top of each pancake.
