Kongsaedaek’s Recipe: There are so many delicious dishes you can make with young radish (yeolmu)! I’ve made the quintessential yeolmu dish: Yeolmu Doenjang Muchim, seasoned with savory doenjang. Its crunchy texture and nutty soybean paste flavor are irresistible!
Main Ingredients- 1/2 bundle young radish (approx. 250g)
- 4 stalks scallions
- 1 Korean chili pepper (Cheongyang)
- 1 red chili pepper
Seasoning Ingredients- 1 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp minced garlic
- 1 Tbsp plum extract (or syrup)
- 1 Tbsp sesame oil
- 1 Tbsp salt (for adjusting seasoning)
- 1 Tbsp dried shiitake mushroom powder (optional, for added umami!)
- A pinch of toasted sesame seeds
- 1 Tbsp Doenjang (Korean soybean paste)
- 1 Tbsp Gochujang (Korean chili paste)
- 0.5 Tbsp minced garlic
- 1 Tbsp plum extract (or syrup)
- 1 Tbsp sesame oil
- 1 Tbsp salt (for adjusting seasoning)
- 1 Tbsp dried shiitake mushroom powder (optional, for added umami!)
- A pinch of toasted sesame seeds
Cooking Instructions
Step 1
First, trim the roots of the young radish and remove any yellowed leaves. Rinse the yeolmu thoroughly under running water several times to ensure all dirt is removed. Bring a pot of water to a boil and add about 1/2 teaspoon of salt. Briefly blanch the cleaned young radish for 30 seconds to 1 minute. Be careful not to overcook, as it will become mushy. Once blanched, rinse the yeolmu in cold water, squeeze out excess moisture, and cut into 4-5 cm lengths.
Step 2
Now, let’s make the delicious seasoning! In a bowl, combine 1 Tbsp doenjang, 1 Tbsp gochujang, 0.5 Tbsp minced garlic, 1 Tbsp plum extract, 1 Tbsp sesame oil, and 1 Tbsp dried shiitake mushroom powder. Mix well until evenly combined. (You can omit the shiitake mushroom powder, but it significantly enhances the umami flavor!) If the seasoning needs adjustment, add salt at the end to taste.
Step 3
Add the prepared seasoning to the trimmed young radish and gently mix and massage it in with your hands. At this stage, add the chopped scallions and sliced red and green chili peppers. Mixing them together adds beautiful color and a pleasant spicy kick, making the dish even more delicious. Finally, sprinkle with toasted sesame seeds for a perfect finish. Your crispy and flavorful Yeolmu Doenjang Muchim is ready!
