With the kids home for vacation and needing three meals a day, things can get hectic! That’s when side dishes that can be stored for a long time are a lifesaver. This recipe features a crispy anchovy stir-fry packed with nuts in a sweet flavor that kids love. It’s perfect for a long-lasting banchan, and even doubles as a delicious snack with beer!
Main Ingredients
- 250g small dried anchovies (Jjanmyeolchi)
- 60g shelled walnuts
- 60g sliced almonds
- 80g Brazil nuts
Seasoning
- 4 Tbsp tuna extract (Chamchi-aek)
- 2 Tbsp cooking sake (Saenggang-sul)
- 3 Tbsp oligosaccharide
- 2 Tbsp grain syrup (Jo-cheong)
- 4 Tbsp olive oil
- 1 Tbsp sesame seeds
- 4 Tbsp tuna extract (Chamchi-aek)
- 2 Tbsp cooking sake (Saenggang-sul)
- 3 Tbsp oligosaccharide
- 2 Tbsp grain syrup (Jo-cheong)
- 4 Tbsp olive oil
- 1 Tbsp sesame seeds
Cooking Instructions
Step 1
Prepare the Brazil nuts and shelled walnuts by crushing them into bite-sized pieces. You can place them in a plastic bag and crush them with a rolling pin or a heavy bottle, or finely chop them. This makes them easier for children to eat.
Step 2
Get your sliced almonds ready. If you are using whole almonds, you can crush them together with the walnuts and Brazil nuts in step 1.
Step 3
Heat a dry pan over medium heat. Add only the small dried anchovies and stir-fry for 2-3 minutes until any fishy smell dissipates. Once the anchovies are lightly toasted, evenly sprinkle 2 tablespoons of cooking sake over them. Continue to stir-fry over medium heat for about 5 minutes to remove any remaining moisture and make them crispier.
Step 4
Add the crushed nuts prepared in step 1 and stir-fry together for about 1 minute. Once the nuts are lightly toasted, add 4 tablespoons of olive oil and stir-fry until the mixture becomes glossy.
Step 5
Now, add all the seasoning ingredients: tuna extract, oligosaccharide, and grain syrup. Stir continuously with a spatula to prevent burning and stir-fry until the mixture turns a nice golden brown. (Tip: If you don’t have tuna extract, you can substitute it with soy sauce or braising soy sauce.)
Step 6
Continue stir-frying until the anchovies are golden brown and aromatic. Turn off the heat, sprinkle in 1 tablespoon of sesame seeds, and mix well. This completes your crispy nutty anchovy stir-fry.
Step 7
Because the nuts are crushed into smaller pieces, children can eat them without any trouble. The combination of crispiness and sweetness makes this an excellent side dish for rice! I sometimes enjoy this nutty anchovy stir-fry as a snack with a cold beer. Be sure to give it a try!
