- 1 Tbsp gochujang (Korean chili paste)

- 1 Tbsp sugar

- 2 Tbsp mirin (rice wine)

Step 1
To enhance the anchovies’ flavor, place them in a dry pan and stir-fry over high heat for 1 minute. This process removes any fishy smell and brings out their nutty aroma. Set the stir-fried anchovies aside in a separate bowl.

Add a generous amount of cooking oil to the pan. Then, add the thinly sliced garlic and stir-fry slowly over medium-low heat. Be careful not to burn the garlic; cook it until it turns golden brown to fully release its flavor. You can remove the fried garlic or leave it in the pan.
