This recipe creates a delightful anchovy stir-fry packed with nuts like pine nuts, almonds, and macadamias, offering a fantastic texture and rich, nutty flavor. It’s made to be crispy rather than hard, making it perfect for young children (starting around 30 months) and adults alike. The natural saltiness of the anchovies means no additional soy sauce is needed!
Main Ingredients- 200g small dried anchovies (Jangmyeolchi)
- 2 handfuls mixed nuts (pine nuts, almonds, macadamias, etc.) (approx. 50-60g)
Seasoning & Others- 2 Tbsp Oligodang (Korean syrup)
- 1 tsp brown sugar
- 1 Tbsp sesame oil
- 2 Tbsp sesame seeds (whole or crushed)

Cooking Instructions
Step 1
Heat a dry pan over medium-low heat. Add the 200g of small dried anchovies. Stir continuously with a spatula for about 5 minutes, making sure they don’t burn. This process removes any fishy odor and enhances their savory, crispy texture.
Step 2
Add the 2 handfuls of mixed nuts (approx. 50-60g) to the pan with the anchovies. Continue to stir-fry for another 5 minutes. Roasting the nuts slightly will bring out their wonderful nutty aroma.
Step 3
Reduce the heat to very low or turn it off briefly. Using the residual heat of the pan, add the 2 Tbsp Oligodang, 1 tsp brown sugar, 1 Tbsp sesame oil, and 2 Tbsp sesame seeds. Quickly toss everything together to coat the anchovies and nuts evenly with the glaze. Your delicious anchovy stir-fry is ready! You can enjoy it immediately, or let it cool completely and store it in an airtight container for an even crispier treat later.
