Ingredients- Minerai (Water Dropwort) 150g
- Bean Sprouts 100g
- Sesame Seeds (crushed) 1 Tbsp
- Sesame Oil 1/2 Tbsp
- Salt 1/4 tsp
- Salt for blanching (a pinch)
Cooking Instructions
Step 1
First, trim the tough ends of the minerai and remove any wilted or damaged leaves. Bring a pot of water to a boil with a pinch of salt. Carefully add the prepared minerai and blanch for just 1 minute. Be careful not to overcook, as it can become mushy.
Step 2
Immediately after blanching, rinse the minerai under cold running water to cool it down and preserve its crisp texture. Once cooled, gently squeeze out any excess water. Cut the minerai into bite-sized pieces, about 5cm in length.
Step 3
Now, let’s blanch the bean sprouts. In boiling water with a pinch of salt, add the thoroughly washed bean sprouts and blanch for about 30 seconds to 1 minute. Similar to the minerai, avoid overcooking to maintain their signature crunch.
Step 4
In a mixing bowl, combine the blanched bean sprouts with 1/4 tsp of salt and gently toss to distribute the seasoning. Then, add the cut minerai to the bowl. Carefully mix everything together, ensuring not to mash the vegetables, until well combined.
Step 5
Once the minerai and bean sprouts are seasoned, add 1 Tbsp of crushed sesame seeds and 1/2 Tbsp of sesame oil. Gently toss one last time to evenly coat all the ingredients. Your delicious Minerai and Bean Sprout Salad is ready to be enjoyed!
