Main Ingredients- 100g fresh chives
- 1/4 onion
- 1 Cheongyang pepper (add more for extra spice)
- 2 cloves garlic
- 1/2 stalk green onion (scallion)
- 2 Tbsp chili oil
- 1 Tbsp oyster sauce
Cooking Instructions
Step 1
First, wash and prepare the fresh chives. Trim off any tough ends at the base and cut them into bite-sized pieces, about 3-4 cm long. Cutting them to a suitable length will make them easier to stir-fry and eat.
Step 2
Peel and wash the 1/4 onion, then slice it thinly into strips. The sweetness of the onion will complement the chives beautifully.
Step 3
Wash the Cheongyang pepper, remove the stem, and slice it thinly on an angle. Removing the seeds will help control the spiciness level.
Step 4
Peel the 2 cloves of garlic and slice them thinly. The garlic will release its aroma when sautéed in chili oil, creating a delicious flavor base.
Step 5
Wash the 1/2 stalk of green onion and slice it finely. The mild sweetness of the green onion will further enhance the overall flavor of the dish.
Step 6
Heat a pan over high heat and add 2 Tbsp of chili oil. Add the sliced garlic and chopped green onion, then stir-fry until fragrant. Be careful not to burn the garlic and stir quickly.
Step 7
Once the garlic becomes fragrant, add the sliced onion and 1 Tbsp of oyster sauce. Stir-fry over high heat just until the onions become slightly translucent. The oyster sauce will add a savory depth of flavor.
Step 8
Finally, add the prepared chives to the pan and stir-fry over high heat for only about 10 seconds. Chives can easily become mushy if overcooked, so stir-fry them quickly over high heat just until they slightly wilt to maintain their crisp texture.
