  • 4 Tbsp (Ts) Corn syrup
  • 1 Tbsp (Ts) Sugar
  • 30g Chopped peanuts

Prepare the Gangjeong mold: Line your gangjeong mold with plastic wrap or a food-grade plastic bag. Lightly brush the inside of the plastic wrap with cooking oil. This prevents the gangjeong from sticking, making it easy to remove later. Be careful not to use too much oil, as it can make the snack greasy.

Roast the perilla seeds: Ensure the washed perilla seeds are thoroughly drained. Place them in a dry pan over low heat and roast them gently without any oil. This process removes any raw taste and enhances their nutty aroma. Stir continuously for about 3-5 minutes until fragrant and lightly toasted. Transfer the roasted seeds to a separate bowl to cool slightly.

Make the syrup: In a saucepan, combine the corn syrup and sugar. Heat over medium-low heat, stirring until the sugar dissolves. Bring the mixture to a boil, then continue to simmer for 1-2 minutes until it thickens slightly into a syrup. Be cautious not to overcook, as the syrup can become too hard.

Combine with perilla seeds and peanuts: Add the roasted perilla seeds to the syrup and stir quickly with a spatula until each seed is evenly coated. Shape the gangjeong: Pour the perilla seed and peanut mixture into the prepared mold. Use the spatula or another piece of plastic wrap to press the mixture down evenly and shape it to your desired thickness. Be very careful as the mixture is hot. Once completely cooled, cut the gangjeong into bite-sized pieces. Your delicious perilla seed gangjeong is now ready!
