  • Roasted almonds 2 handfuls
  • Olive oil or grapeseed oil 4 tablespoons

Stir-fry Seasoning

  • Oligosaccharide or corn syrup 4-5 tablespoons
  • Soy sauce 2 tablespoons
  • Cooking wine (mirin) 1 tablespoon
  • Red pepper flakes 1/2 tablespoon
  • Vinegar 5-6 drops
  • Black pepper, a pinch (a dash)

First, prepare the roasted almonds which will add a delicious nutty flavor. Take 2 handfuls of almonds and roughly chop them into bite-sized pieces. If you chop them too small, they might lose their satisfying crunch, so aim for a moderate size.

Now, let’s make the flavorful seasoning that will make this anchovy stir-fry so delicious. In a bowl, combine the oligosaccharide (or corn syrup), soy sauce, cooking wine, red pepper flakes, vinegar, and black pepper. Mix them well. The cooking wine helps to remove any fishy smell from the anchovies and adds a nice sheen.

It’s time to stir-fry the anchovies. If you stir-fry small dried anchovies directly, they can become too hard, so it’s important to lightly dry them out first. Gently stir-fry them over low heat to remove moisture, being careful not to burn them. *Quick Tip: Use the Microwave* Spread the anchovies evenly on a microwave-safe plate and microwave for 1 minute, twice. This quickly and easily removes moisture. Once the moisture is removed, place the anchovies in a pan, add 4 tablespoons of olive oil (or grapeseed oil), and stir-fry over low to medium-low heat. To prevent burning and ensure even cooking, use two spatulas to continuously toss the anchovies from top to bottom, inside and out. This will help achieve a crispy texture.

Once the anchovies are lightly golden brown, add the pre-chopped almonds and the prepared seasoning to the pan. Stir-fry everything together over low heat. Maintaining a low heat is crucial to prevent the seasoning from burning and to allow it to evenly coat the anchovies and almonds. If you find it difficult to control the heat, you can temporarily remove the pan from the heat, thoroughly mix all the ingredients, and then return it to low heat for a short while longer.
