- Potato starch, 2 tablespoons (measured with a rice spoon)
- Curry powder, 0.5 tablespoon (measured with a rice spoon)
- Cooking oil, a little (apply generously)
Cooking Instructions
Step 1
First, let’s prepare the coating. In a wide dish, combine 2 tablespoons of potato starch and 0.5 tablespoon of curry powder. Mix them well with a spoon. The curry powder helps to eliminate any fishy odor and adds a nice flavor. Please use a standard rice spoon for measurement.
Step 2
Rinse the sole fillet briefly under running water and then pat it completely dry with paper towels. If there’s excess moisture, the coating won’t adhere well. Make 2-3 shallow cuts on the surface of the fish. This helps the seasoning penetrate better and prevents the fish from puffing up while cooking.
Step 3
Evenly coat the sole fillet on both sides with the prepared potato starch and curry powder mixture. Gently tap the fish as you apply the powder to ensure an even coating without clumps.
Step 4
Brush the surface of the coated sole with cooking oil on both sides. This step is crucial for achieving a super crispy and golden-brown finish in the air fryer. Place the sole in a preheated air fryer and cook at 180°C (350°F) for 15 minutes. Cooking times may vary depending on your air fryer model, so it’s a good idea to check halfway through. After 15 minutes, flip the fish and cook for an additional 5 minutes for a perfectly crispy and moist baked sole.
