- 2 Tbsp cooking wine (mirin or sake)
- 2 Tbsp starch (potato or corn starch)
- 1 Tbsp curry powder

First, to eliminate any fishy smell, spread 2 tablespoons of cooking wine evenly over the surface of the mackerel and let it marinate for about 5 minutes. This step helps remove odor and enhances the mackerel’s flavor. In a small bowl, mix the starch and curry powder in a 2:1 ratio – that’s 2 tablespoons of starch to 1 tablespoon of curry powder. Mix them well. The curry powder helps mask any fishy odors and contributes to a crispier exterior.

After marinating the mackerel in cooking wine, lightly pat it dry with a paper towel. Then, coat both sides and the edges of the mackerel evenly with the prepared starch and curry powder mixture. Applying a thin coating will result in a crispier and cleaner texture.
