Ingredients

  • 300g Tofu (water squeezed out)
  • 200g Cake Rice Flour
  • 1 Large Egg
  • 55g Sugar
  • 5g Salt
  • 5g Baking Powder
  • 2 Tbsp Black Sesame Seeds

Cooking Instructions

Step 1

First, it’s crucial to remove as much moisture from the tofu as possible. Use kitchen towels or a cheesecloth to press the tofu firmly and squeeze out the water. Excess water can make the dough too wet.

In a bowl, mash the de-watered tofu using a fork or your hands until it’s smooth and lump-free. Aim for a texture similar to rice grains.

In a separate bowl, crack 1 large egg and add 55g of sugar. Whisk them together with a fork until the sugar is dissolved. You don’t need to over-whisk it.

Add the egg and sugar mixture from step 2 to the mashed tofu. Gently mix them together using a spatula until well combined. Ensure the tofu is smoothly incorporated without lumps.

To the dough from step 3, add 200g of sifted cake rice flour, 5g of baking powder, and 5g of salt. Mix gently until just combined, until no dry flour is visible. Be careful not to overmix, as this can make the crackers tough.

Finally, add 2 tablespoons of black sesame seeds for a nutty flavor and gently fold them into the dough until evenly distributed.

Spread the finished dough as thinly as possible onto a baking sheet lined with parchment paper or into an air fryer basket. Thinness is key for crispiness! If using an air fryer, bake at 180°C (350°F) for 6 minutes, then flip and bake for another 3 minutes. For an oven, preheat to 180°C (350°F) and bake for 15-20 minutes until golden brown. Baking time may vary depending on thickness and your appliance, so check periodically.

Once baked, let the tofu crackers cool slightly on the baking sheet before transferring them to a wire rack to cool completely. They will become extra crispy as they cool down.
