Crispy and Fragrant Stir-Fried Zucchini Salad
Make the Best Zucchini Salad with a Fantastic Texture!
Today, we’ll be making a zucchini salad that’s perfect in both texture and flavor. 🙂
Main Ingredients- 600g Zucchini (about 1 medium-sized)
- 50g Scallions (about 1 bunch)
Cooking Instructions
Step 1
First, wash the zucchini thoroughly and remove the ends. Slice it into thin half-moons, about 0.4cm thick. Avoid slicing too thick, as it will take longer to cook, and too thin, as it might break apart. Slice the scallions into 3cm lengths.
Step 2
Heat a generous amount of cooking oil in a frying pan over medium heat. Add the prepared zucchini and pan-fry until golden brown on one side, then flip and cook the other side until nicely browned. The key is to cook it until the zucchini is tender inside but still slightly crisp, not mushy.
Step 3
Transfer the pan-fried zucchini to a large bowl. Add 2 Tbsp soy sauce, 1/2 Tbsp minced garlic, and 1.5 Tbsp gochugaru. Gently mix everything together to ensure the seasoning coats the zucchini evenly. Be careful not to overmix, as this can cause the zucchini to break apart.
Step 4
Next, add the sliced scallions and gently mix them in. The fresh aroma of the scallions will enhance the overall flavor of the dish.
Step 5
Finally, add 1 Tbsp sesame oil and 1/2 Tbsp toasted sesame seeds. Gently toss one last time to combine. For an even richer sesame flavor, you can lightly crush the sesame seeds before adding them. Your delicious zucchini salad is now ready!
