Main Ingredients- 1 medium Zucchini
- 1/2 medium Onion
Seasoning Ingredients- 1 Tbsp minced Garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Saeujeot (fermented salted shrimp), including brine
- Pinch of Salt (for adjusting taste)
- 1 Tbsp chopped Scallions
- 1/2 Tbsp Sugar
- 1/2 Tbsp Sesame seeds, toasted and crushed
- Pinch of Black pepper
For Stir-Frying- 4 Tbsp Cooking oil
- 1 Tbsp minced Garlic
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Saeujeot (fermented salted shrimp), including brine
- Pinch of Salt (for adjusting taste)
- 1 Tbsp chopped Scallions
- 1/2 Tbsp Sugar
- 1/2 Tbsp Sesame seeds, toasted and crushed
- Pinch of Black pepper
For Stir-Frying- 4 Tbsp Cooking oil
Cooking Instructions
Step 1
First, wash the zucchini thoroughly. Slice it into half-moon shapes about 0.7cm thick. Avoid slicing them too thinly so they maintain their crispness when stir-fried. Slice the onion into similar-sized pieces, either julienned or diced.
Step 2
Bring a large pot of water to a boil and add a pinch of salt. Add the prepared zucchini to the boiling water and blanch for about 1 minute. Be careful not to over-blanch, as this will make it mushy. Immediately remove the zucchini, rinse it under cold water to cool down, and then drain thoroughly in a colander. You can gently press with paper towels to remove any excess water.
Step 3
Heat a frying pan over medium heat and add 4 tablespoons of cooking oil. Add 1 tablespoon of chopped scallions and 1 tablespoon of minced garlic. Stir-fry for about 30 seconds until fragrant to create scallion oil. It’s best to keep the heat on medium-low to prevent the garlic from burning.
Step 4
Once the scallion oil is fragrant, add the sliced onion and stir-fry for about 1 minute until translucent. The onion will caramelize slightly, adding sweetness and depth. Next, add 1 tablespoon of salted shrimp and stir-fry for another minute, ensuring the seasoning is evenly distributed.
Step 5
Add the blanched zucchini to the pan. Sprinkle in 1 tablespoon of gochugaru and stir-fry for about 1 minute until the zucchini is coated. Turn off the heat, then add 1/2 tablespoon of sugar and a pinch of black pepper. Taste and adjust the seasoning with salt if needed, keeping in mind the salted shrimp is already salty.
Step 6
Transfer the finished stir-fried zucchini with salted shrimp to a serving plate. Sprinkle with 1/2 tablespoon of toasted sesame seeds for added nutty flavor. Your crisp, flavorful zucchini stir-fry is ready! Its vibrant color and texture make it a delightful side dish to enjoy with a bowl of warm rice.
