Main Ingredients- Rinds from a 6kg watermelon (focus on the thick green part)
- Carrots 200g
Seasoning Ingredients- 100g coarse salt (for pickling)
- 50g soy sauce (approx. 3.5 Tbsp)
- 100g granulated sugar (approx. 7 Tbsp)
- 50g vinegar (approx. 3.5 Tbsp)
- A little sesame oil (for flavor)
- 100g roasted sesame seeds (approx. 7 Tbsp)
- 100g coarse salt (for pickling)
- 50g soy sauce (approx. 3.5 Tbsp)
- 100g granulated sugar (approx. 7 Tbsp)
- 50g vinegar (approx. 3.5 Tbsp)
- A little sesame oil (for flavor)
- 100g roasted sesame seeds (approx. 7 Tbsp)
Cooking Instructions
Step 1
First, wash the watermelon rinds thoroughly and prepare them. Remove any dirt from the outside. If the white part is too thick, you can trim it or use it as is. We’ll primarily use the firm green rind.
Step 2
Thinly slice the white part of the prepared watermelon rind (the part closest to the flesh). Slicing them too thickly will affect the texture, so it’s important to cut them about 2-3mm thick. Sprinkle 100g of coarse salt over the sliced rinds and mix well. Let them pickle for about 30 minutes. This process draws out moisture and helps maintain a crisp texture.
Step 3
Rinse the pickled watermelon rinds under cold running water two or three times to remove excess salt. After rinsing thoroughly, squeeze the rinds firmly with your hands to remove as much water as possible. If there’s too much moisture left, the dressing will be diluted and the rinds might become mushy, so squeezing them tightly is crucial.
Step 4
Now it’s time to season. Cut the watermelon rinds into bite-sized pieces (about 5cm long). Julienne the carrots into thin strips, similar in thickness and length to the rinds, to add color. In a large bowl, combine the squeezed watermelon rinds and julienned carrots. Add 50g soy sauce, 100g sugar, 50g vinegar, a little sesame oil, and 100g roasted sesame seeds. Gently mix everything with your hands until the seasonings are evenly distributed. Taste and adjust the sugar or vinegar if needed according to your preference.

Once all the ingredients and seasonings are well combined, your delicious Watermelon Rind Salad is ready!
