First, wash the cucumbers thoroughly under running water. Trim off the very ends if desired, but leave a small portion connected. Cut each cucumber into 3-4 sections. Then, make a cross-shaped slit from the cut end about three-quarters of the way up, being careful not to cut all the way through. Place the cut cucumbers in a bowl and sprinkle with salt. Let them salt for about 15-20 minutes, turning them halfway through to ensure even salting.

While the cucumbers are salting, let’s prepare the delicious stuffing! Trim any tough outer leaves from the fresh chives, wash them well, and drain thoroughly. Chop the chives into approximately 5cm (2-inch) lengths. Peel and finely mince the onions. Adding minced onion will give the Oi Sobagi a wonderfully refreshing and crisp texture. In a bowl, combine the prepared chives and minced onion with the seasoning ingredients: red pepper flakes, minced garlic, and anchovy sauce.
