Main Ingredients- 1/2 Winter radish
- 1 Tbsp Coarse salt
- A little Green onion (green parts only)

- 1 Tbsp Toasted sesame seeds (crushed)

Cooking Instructions
Step 1
First, peel the winter radish and slice it into 0.5cm thick pieces, then cut into 5cm long julienne strips. This slicing method ensures a better texture when stir-fried. Sprinkle 1 tablespoon of coarse salt evenly over the julienned radish and let it sit for 10 to 15 minutes to lightly salt. Salting draws out the moisture from the radish, preventing water from forming during stir-frying, and infuses it with flavor, making it tastier.
Step 2
Firmly squeeze out the water from the salted radish julienne using your hands. If the radish tastes too salty, you can quickly rinse it under cold water once and then squeeze out the water thoroughly again. This step allows you to adjust the saltiness of the radish greens while maintaining their crispiness.
Step 3
Add all the squeezed radish julienne to a heated pan. Then, add 2 tablespoons of sunflower oil (or your preferred cooking oil) and 1 teaspoon of minced garlic. Finely chop the green parts of the green onion and add them for extra fragrance. Stir-fry over high heat for about 5 minutes until the radish turns translucent and slightly glossy. Stir-frying quickly over high heat prevents the radish from becoming mushy and helps maintain its crisp texture.
Step 4
Once the radish is stir-fried to your liking, just before turning off the heat, generously sprinkle 1 tablespoon of sesame oil and 1 tablespoon of crushed toasted sesame seeds. Gently mix to allow the nutty flavors of the sesame oil and seeds to coat the radish greens.
Step 5
Finally, turn off the heat and let the radish cook slightly more in the residual heat of the pan. It might feel a bit firm at first, but the residual heat will gently cook the radish through, keeping it tender yet still wonderfully crisp. This method results in stir-fried radish greens that are not mushy and are delicious. Enjoy with a warm bowl of rice!
